{Popsicle of the Month} - Root Beer Float Pops

Never mind that this weekend the temperatures are only in the forties and that it snowed on Thursday {it didn't stick though because the ground isn't cold.}  Last Sunday it was a spectacular 70 degrees.  So, before fall turns into winter I made these super easy and wonderfully yummy popsicles.


I recommend planning ahead when making these popsicles because you will want to use flat root beer so open a can the day before and leave in the refrigerator.

Root Beer Float Pops
Vanilla Ice Cream
Cold, Flat Root Beer
Using a spoon, loosely fill your popsicle molds with small scoops of ice cream.  Pour the root beer into the molds and fill to the top.  Insert sticks into molds and freeze until firm.

{Popsicle of the Month} - Watermelon-Lemonade Ice Pops

Even though summer is fading away, the popsicles are not.  {Fading away except for Tuesday when it was 95 degrees.   What the heck was that all about?}


This watermelon-lemonade ice pop from Bon Appetit reminds me of the popsicles my siblings and I made when we were kids.  Our popsicles were simple - lemonade in a dixie cup placed in the freezer.  For some reason my mom frowned on our method.  {Something about them spilling in the freezer I think.}  We didn't bother with popsicle sticks and sometimes we didn't even let them freeze solid - instead opting for a slushy.

{Popsicle of the Month} - Peach Vanilla Cream Pops

Yes, I know.  Just last Sunday on a post I told you how I try to eat healthy and now I'm telling you about popsicles.  Well, I'm a true believer in treating yourself once in a while (or everyday!). And these yummy Peach Vanilla Cream Pops from Bon Appetit are a delicious treat.


I debated adding the amaretto and in the end I did.  But the next time I make them I will not.  I think this recipe would be good with other fruit - especially strawberries.

So go ahead and treat yourself to these pops.
